Ahhhh….the lunch lady in Vietnam. She came recommended by Anthony Bourdain himself. We searched far and wide for her and when we finally found her, she nearly gave me a run for it. Literally. I’ve never felt so conflicted in my life. My stomach killed me for days, yet my mouth…my mouth will always crave for those noodles forever.
The lunch lady makes a different kind of noodle soup everyday and even before she opens up shop, there’s already a line of people waiting to get a taste of her daily special. Her specialty that day was ‘bun mam.’ The broth is made of fermented anchovies, seafood, pork, eggplant, and spices. As unappetizing as it sounds, it is full in flavors and will make your taste buds wanting more.
